🍽️ Authentic Palestinian Recipes
1. ZA'ATAR with Olive Oil (الزعتر بالزيت) — The Classic
The most beloved Palestinian breakfast, simple and sacred.
Ingredients:
- 3 tablespoons Green ZA'ATAR
- 4 tablespoons extra virgin Palestinian olive oil
- Fresh warm bread (taboon or pita)
Method: Pour the olive oil into a small plate. Sprinkle the ZA'ATAR generously over the oil. Dip your bread and enjoy. That’s it — perfection needs no complexity.
2. ZA'ATAR Manaqeesh (مناقيش الزعتر) — Palestinian Flatbread
The iconic street food of Palestine, baked fresh every morning.
Ingredients:
- 4 tablespoons Green ZA'ATAR
- 5 tablespoons olive oil
- Pizza or flatbread dough (enough for 4 pieces)
- Optional: sliced tomatoes, fresh mint, olives to serve
Method: Mix ZA'ATAR with olive oil to form a thick paste. Spread generously over flattened dough. Bake at 220°C (430°F) for 8–10 minutes until edges are golden. Serve hot with fresh vegetables and tea.
3. ZA'ATAR Roasted Chicken (دجاج بالزعتر)
A festive dish that fills the home with the aroma of Palestine.
Ingredients:
- 1 whole chicken
- 3 tablespoons Green ZA'ATAR
- 4 tablespoons olive oil
- 1 lemon (juice)
- 4 garlic cloves, minced
- Salt and black pepper to taste
Method: Mix ZA'ATAR, olive oil, lemon juice, garlic, salt and pepper into a marinade. Coat the chicken thoroughly and let it rest for at least 2 hours (overnight is best). Roast at 200°C (390°F) for 60–75 minutes until golden and fragrant.
4. ZA'ATAR & Tomato Salad (سلطة الزعتر والبندورة)
A refreshing summer salad bursting with Palestinian flavors.
Ingredients:
- 2 tablespoons fresh or dried Green ZA'ATAR
- 3 ripe tomatoes, diced
- 1 cucumber, diced
- Half red onion, finely sliced
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
Method: Combine all vegetables. Whisk olive oil, lemon juice and salt. Toss with ZA'ATAR and serve immediately with bread.
5. ZA'ATAR Herbal Tea (شاي الزعتر)
A soothing traditional remedy, warming body and soul.
Ingredients:
- 1 teaspoon Green ZA'ATAR
- 1 cup boiling water
- 1 teaspoon honey (optional)
Method: Steep ZA'ATAR in boiling water for 5 minutes. Strain, add honey if desired, and sip slowly. Known in Palestinian folk medicine to boost immunity and calm the mind.
